Holiday Recipe: Fudge with that Special Something… Velveeta Cheese!

http://www.kraftfoods.com/images/recipe_images/Million_Dollar_Fudge.jpgAdmittedly, I was a little skeptical of this one. Fudge, Velveeta (a “classic” since 1928) processed cheese? It sounds a little disgusting. I try to stay away from this sort of thing. But to my surprise, as well as to those of countless others, this fudge recipe is mouth wateringly awesome. Better yet, it’s simple, requires no baking, and you don’t have to tell anyone about the secret ingredient. I was actually “tricked” into trying it before I discovered what made it so tasty.

VELVEETA CHEESE FUDGE

8 oz. Velveeta cheese
1 c. margarine
1 t. vanilla
2 lbs. confectioners sugar
½ c. cocoa
2-3 c. chopped pecans

Heat the cheese, margarine and vanilla in microwave until melted.

Meanwhile, combine confectioners sugar, cocoa and pecans.

When cheese mixture is melted, add to dry ingredients and mix well using hands. When completely mixed, spread in a 9 x 13 x 2 buttered dish. Chill at least one hour before cutting. Freezes well. Makes 100-120 pieces.
