Figuring out what to make for dinner can be a revelation, and then most of the time it’s a big pain in the ass. It’s the deciding that kills me. There seem to be so many options. So my strategy? The Farmer’s Market. All it requires is that I walk through it and buy what looks most beautiful. Then I get home and can figure out what to make with what I’ve bought. This time of year it’s all about root vegetables and thus my absolute favorite: beets.
My recipe (or I should say my dad’s recipe ) for the best beets ever in under 10 minutes from start to finish:
Ingredients to serve 2:
- 3 raw beets
- 1/2 lemon
- 1 pinch sea salt
Grate the raw beets on the smallest part of the grater. When finished, squeeze half the lemon over it. Then sprinkle salt to taste. That’s it. And it’s delicious. It won’t be an entire dinner, but it’s a start. If you really want to make it fancy, you can add some fresh mint or a dash of balsamic vinegar. FYI you can do the same thing with chopped celery root and it’s equally delicious (just add a touch of olive oil).
