Rave: Gelson’s Chicken Apple Sausages

Sausage smileWhile I love to travel the world with my palate and rejoice at the chance to try something new, the truth of it is that I’m a creature of habit. True story: I worked in a restaurant after college for two years. I ate there… Every. Single. Day. For two years. I would even go in on my days off and eat there. Rain man ain’t got nothing on me. Gotta have maple syrup indeed, Raymond.

So allow me to share with you a treat, nay, an obsession I’ve had for… Well, years.

Gelson’s Chicken and Apple Breakfast Sausage.

Now, dearest reader, be cautious. Gelson’s sells two types of chicken apple sausage. One is thick and rubbery, with walnuts, essentially unfit for human consumption and purchased mainly by masochists or those repenting some unforgivable sin.

The other, glorious manna from heaven, is much smaller, I daresay more svelte, in its little 6-pack box. Also, it’s labeled “chicken and apple breakfast sausage,” but don’t be fooled! Not only can you eat them anytime, they are more enjoyable as a plat de resistance, rather than being relegated to the role of side dish in an already bloated breakfast orgy.

It all started when I was but a youth, and my mother brought home what I initially decried as an abomination before man and god. “Chicken sausage? How the hell do they make sausage out of chicken? And why? What’s wrong with real sausage? And it has apples in it, too? Gross!”

Youth is truly wasted on the young.

Needless to say it became a staple of my diet for years to follow. And for maximum enjoyment, this is how I recommend preparing them:

Crystal hot sauceFirst, get yourself some nice, tasty, organic quinoa. In fact, go buy a big bag of the stuff at Nature Mart right now. Depending on how much of a pig you are your appetite, make anywhere from 1/3 cup to 1 cup of it. Then simply sauté the sausages, preferably with some fresh thyme. Toss your quinoa on a plate, add your sausages, and most important, apply liberal amounts of Crystal Louisiana Hot Sauce and voilà! Now you too can dine like an OCD Frenchman!

Important note: There are many other types of chicken apple sausages. Most are simply not good, and the few that are don’t quite measure up. It’s honestly worth trying these at least once.
